Ingredients
- 4 tbsp coconut oil (melted)
- 8oz unsweetened plant milk (I used Bolthouse Farms)
- 3/4 cup coconut flour
- 6 tbsp vegan chocolate chips
- 3 scoops vegan chocolate protein powder (I used 1st Phorm)
- 2 ripe bananas
- Cooking spray
Directions
- Preheat oven to 425 degrees
- Spray 12 cup muffin tin with cooking spray
- Place all ingredients in food processor and blend (batter will be very thick)
- Evenly distribute into the 12 cup tin
- Bake for 25-30 minutes until cooked through and tops of muffins are crisp
- Enjoy with a cold glass of plant milk!
