A taste of the south without the excess calories, and a little added protein!
Ingredients:
- 1.5 cups cornmeal
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 teaspoon salt
- 3 tbsp olive oil
- 1 cup unsweetened apple sauce
- 1 egg
- 1 cup ultra-filtered milk (I use Fairlife Skim)
- 1/2 cup frozen chopped spinach- thawed, drained and squeezed dry
- 1 cup 2% shredded cheddar cheese
Directions
- Preheat oven to 350 degrees F. Lightly spray 12 cup muffin cups with cooking spray.
- Mix the cornmeal, baking powder, baking soda, and salt in a mixing bowl.
- Stir the olive oil, egg, milk, spinach, apple sauce and cheddar cheese together in a large mixing bowl until evenly blended.
- Slowly stir cornmeal mixture into the blended wet ingredients to form a batter.
- Spoon about 2 tbsp into each muffin cup (evenly distribute the batter as best as you can among the 12 cups)
- Bake in preheated oven until toothpick inserted into the center of a muffin comes out clean, about 35 minutes.
