I don't know about you, but I am a SUCKER for Mediterranean food! Even though the food can be extremely healthy, the fat and carbohydrates can add up quickly! Check out this heart healthy, yet flavor packed recipe I came up with!
Ingredients
For chicken
- 2lbs chicken breast
- 3 cups lemon juice
- 2 garlic cloves (diced)
- Salt/pepper to taste
Tzatziki Sauce
- 3 cups non-fat plain greek yogurt
- 8oz sliced cucumber
- 2 tbsp lemon juice
- 2 cloves garlic
- 1 tbsp salt
- 1 tsp pepper
- Fresh dill (to taste)
For taco
- Whole wheat pita
- Diced tomatoes
- Diced cucumbers
- Crumbled feta cheese
Step 1
- Place cleaned/trimmed chicken breast in Crock Pot with lemon juice, garlic and salt/pepper.
- Cook on high for 4 hours
- Drain 3/4 liquid and shred all chicken using two forks
Step 2
Place yogurt, cucumber, lemon juice, garlic, salt, pepper, and dill in food processor and blend until mixed well!
