Naturally gluten free, no processed ingredients and only 7g of sugar!
Ingredients:
- 1-2 sweet apples diced, about 2 cups (I used Honeycrisp)
- Juice of 1 lemon
- 1 tbsp honey
- ¼ tsp of cinnamon
- 1.5 cups buckwheat flour
- 1 tsp baking soda
- ¼ tsp salt
- ¼ tsp ground nutmeg
- Dash of Allspice
- 1.5 cup unsweetened cinnamon applesauce
- ½ cup stevia
- 2 tbsp ghee (Can substitute with butter or oil)
- 2 large eggs
- 1.5 tsp vanilla extract
- ½ cup chopped walnuts (or nut of your choice)
- 11x7 baking pan
- Cooking spray
Directions:
- Spray your 11x7 baking pan with cooking spray. Set aside and preheat your oven to 350 degrees fahrenheit.
- In a small bowl, mix together the diced apples, lemon juice, cinnamon and honey. Set aside.
- Then, in a large mixing bowl, mix together all of the dry ingredients (flour, baking soda, salt, nutmeg, - allspice)
In a separate mixing bowl, whisk together the applesauce, eggs, stevia, vanilla and butter.
- With an electric mixer, slowly add your wet mixture into your mixing bowl of dry ingredients. Scrape down the sides to make sure all is mixed in. Don’t over mix!
- Then, gently fold the diced apples and walnuts into the mixture.
- Add the mix to your oiled baking pan.
- Bake on 350 degrees for 30 minutes or until an inserted toothpick comes out clean.
- Let cool for 15 minutes in the pan
- Slice into 12 equal parts and enjoy!
